In fact, one of the quickest ways to experience the local flavor of Taiwan is to visit one of the island's many night markets, each with a tempting array of mouth-watering delicacies.

I started with the Braised Pork Belly Noodle.

The braised pork belly was so soft, juicy and tender that it oozed out the natural flavor of the pork belly in my mouth. The noodles were springy, chewy and soft to my every bite. The soup broth was light, non-spicy, delicious, not oily and did not clogged. The beautiful combination of the pork belly, noodles and broth were so delightful that I slurped up every drop of the broth, and ate up every strain of noodles and pork belly. I really enjoyed this bowl of pork belly noodle.
The Char Siew Noodle, in comparison was lightly spicy with every mouthful of the tender and succulent char siew meat taken together with the broth and noodles.

Don't let the color of the soup broth deceive you. It might look pale in color and unassumingly non-spicy. In truth, the broth is deliciously lightly spicy and would delight you if you are a fan of spicy broth. I equally love this Char Siew Noodle as with the Braised Pork Belly Noodle.
As a refreshment, I ordered the Apple Avocado Blend.
